Nothing screams THIS IS FOR GROWNUPS quite like a flame-hued, capsaicin-laced, face-staining sauce. Consider the Buffalo wing, something my kid wouldn’t touch with a 10-foot pole.

To make this dinner feel special enough to dedicate some energy cooking post-bedtime or for an at-home date night, I took what I personally like best about Buffalo wings (the sauce, the celery, the blue cheese) and applied that to my favorite chicken cut: bone-in, skin-on thighs.
