It serves 4-6 as written above. You could definitely cut it in half, but then you'd be left with some annoying odds and ends (if that doesn't bother you, no worries). So, here's how I'd approach it instead: I like a pretty veg-heavy soup, so I'd still use the full container of mirepoix. I'd use only one quart of chicken broth. I'd also still use the full noodle kit. I'd do about half the bag of dumplings, and the full serving of bok choy, too (again, I like veg in my soup). When it's time to stir in the sauce packet, pour in half, taste the broth, and decide if you want the rest of the soy-sesame mixture. (I would personally do the whole packet.) In the end, you'll still have some leftovers which you could reheat on the stove or microwave. Unfortunately, this kind of soup will not freeze well.
That's great. I like the left overs I just have to be careful how much is leftover so I'm not eating it for the rest of the week. As you can imagine- cooking for one I could make something that I'm eating for lunch & dinner all week. 😂 But I love some version of a soup that uses those TJ Dumplings. And I haven't tried the noodles before. 🙏🏻
